It's more common in South India but now I see it just as much everywhere in India. Put oil in a wok and heat for a minute. Add mustard seeds, channa dal, urad dal and onion. Add semolina and saute until light brown.

Steps to make Semolina Upma/ Sooji Upma:
  1. Heat a pan or kadhai first. add the 1 cup suji.begin to roast the rava. stir often while roasting the suji/rava.the rava or sooji grains should become fragrant and start to look dry, separate and crisp. don’t brown the rava. - once the rava becomes fragrant and starts to look dry and crisp, then switch off the flame and add the roasted rava in a plate and keep aside.
  2. In a pan, heat 2 tbsp ghee or oil. Add all the ingredients instead of masala.
  3. Then add 3.5 cups water to this mixture and add salt, masala and rava.once you add the rava, stir immediately.
  4. Quickly stir and mix very well. the rava grains absorb water and thus swell and get cooked. cover and allow the rava upma to steam for 2 minutes on the low flame.
  5. Serve rava upma hot with slices of lemon.
