Instructions to make KANJI-Rice Gruel:
- Clean the rice.
- Boil the water in a large vessel.
- On boiling, add the uncooked rice.
- The rice absorbs water and expands.
- Stir in between for evenness and so that it does not stick underneath.
- When the rice is almost cooked by around 20 minutes, you will find the starch coming on top of the vessel.
- Wait for another 5 minutes till the rice is soft and completely cooked.
- Take a big ladle with a spherical bottom and pour the rice and water mix into a plate.This is Kanji.
- Add salt into the Kanji just before serving with pickle and pappad.
