Instructions to make KANJI-Rice Gruel:
  1. Clean the rice.
  2. Boil the water in a large vessel.
  3. On boiling, add the uncooked rice.
  4. The rice absorbs water and expands.
  5. Stir in between for evenness and so that it does not stick underneath.
  6. When the rice is almost cooked by around 20 minutes, you will find the starch coming on top of the vessel.
  7. Wait for another 5 minutes till the rice is soft and completely cooked.
  8. Take a big ladle with a spherical bottom and pour the rice and water mix into a plate.This is Kanji.
  9. Add salt into the Kanji just before serving with pickle and pappad.
  10. Rice gruels are healthy, traditional and full of starch. Good for your carbohydrate needs.
