Aloo Dum is an easy Indian food recipe prepared with baby potatoes that are simmered in a yogurt based sauce and spiced with garam masala. Goes well with rotis or rice. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.

Instructions to make Aloo Dum:
  1. Peel the potatoes and cut them into halves
  2. Heat some oil in a pan and fry the potatoes till golden brown and keep aside
  3. Grind the khuskhus into powder and then mix it with tomato, curd, kishmish. Keep the paste aside
  4. Heat some more oil in the pan and put the bay leaves, cinnamon, cardamom sticks and cumin seeds
  5. Once they crackle put the masala made in step 3 and add turmeric and chilli powder to it. Saute it till it's well cooked
  6. Add the fried potatoes into this and mix well. Add salt as per taste and some water and bring it to boil
  7. Once it is cooked and the gravy is of the consistency you need, put some garam masala and remove
  8. Serve hot with puri or parathas
