Aloo Dum is an easy Indian food recipe prepared with baby potatoes that are simmered in a yogurt based sauce and spiced with garam masala. Goes well with rotis or rice. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.

- Peel the potatoes and cut them into halves
- Heat some oil in a pan and fry the potatoes till golden brown and keep aside

- Heat some more oil in the pan and put the bay leaves, cinnamon, cardamom sticks and cumin seeds
- Once they crackle put the masala made in step 3 and add turmeric and chilli powder to it. Saute it till it's well cooked
- Add the fried potatoes into this and mix well. Add salt as per taste and some water and bring it to boil
- Once it is cooked and the gravy is of the consistency you need, put some garam masala and remove
- Serve hot with puri or parathas
