The ingredients needed to make Shira / Sooji ka halwa:
- Prepare 1 cup barik Rava/ Sooji
- Prepare 3 tbsp Ghee
- Take 1 cup Sugar
- Get 2 1/2 cup Water
- Take as required Assorted dry fruits (almonds/ cashews)
- Take 1/4 spoon Cardamom powder
South Indian rava kesari or kesari bath is a variation of this which is made much the same way but with an addition of kesari color. Semolina, when made sweet, is called sheera. Several variants of this dish are available under other names in various parts of India. For instance, in Maharashtra, it is called sheera which is the sweet version and in North India it is called sooji (suji) halwa or Mohan bhog.
Instructions to make Shira / Sooji ka halwa:
- Heat a Pan on low heat. Add rava, ghee. Mix well and roast the rava on medium heat until it turns reddish. Do not roast the rava in nonstick pan as pan may get scratches due to course nature of rava. Remove the pan from stove.
- Heat a pan on medium heat. Add 2 1/2 cup water (you can change quantity of water according to your taste).
- When water get boiled then add 1 cup sugar and 1/4 spoon cardamom powder. Stir well
- Add the barik rava/ sooji. No lumps of rava should be formed. Add dry fruits. Mix well. Cover and cook for 5 mins on medium heat.
- Remove the lid and stir well. Add ghee. mix well. Turn off the heat. Shira/ Sooji ka halwa is ready to serve.
