- Get Couscous
- Get Vegetable oil
- Get Tomatoes

Gently fluff jollof couscous with a fork. Add some coconut oil or butter to a large pan and heat slightly. This jollof couscous is a casual spin on that. Jollof rice is one of the most common dishes in West Africa, tracing back its origin to the Senegambian region ruled by the Jolof Empire.
Instructions to make Jollof couscous:
- Dice onions and tomatoes, grind pepper and garlic
- Put oil on fire and pour them in and fry a little
- Pour hot water and add spices (thyme, curry, seasoning) add in vegetable of your choice (I used bitterleaf). And allow to boil
- Reduce heat, Add couscous and stir and cover for awhile. Open and stir again if it's soft then u are done. If it's still strong add little hot water.. off stove and allow to steam. Done!!
