Top tip for making Cinnamon, oat and sultana cookies. These cookies make a great topping when crumbled over ice cream or custard. Cake will not rise to top of the tin. This cake is quite good but I just can't leave anything without putting my mark on it.
Instructions to make Cinnamon-sultana Tea Cake:
- Line tin / Preheat oven at 180C
- Cream butter, sugar and vanilla till pale and creamy.
- Beat in egg.
- Lightly fold flour to butter mixture. Stir in milk and tea.
- Fold in Sultanas dusted with little flour.
- Spread mixture in pan and smooth surface.
- Bake for 30 - 35mins. Cool 10 mins in pan before turning onto rack.
- When still warm, brush top.with butter a tbsp and sprinkle cinnamon sugar. Enjoy!!
