Instructions to make Jellof couscous:
- Wash and slice your tomato, onion and red bell pepper.
- Wash ur meat, add ur seasoning and cook till tender.
- Allow d meat to cool down den cut into small pieces.
- Grind ur Scotch bonnet and garlic.
- Add oil in a pot, add half of ur onion add in ur diced meat and fry a little.
- Add in ur Scotch bonnet and garlic stir well.
- Add your seasoning, salt and curry powder n stir.
- Add in ur diced red bell pepper n tomato and allow to fry.
- Add in ur meat stock(the water u used to cook ur meat). Add 1 cup of water stir n allow to boil out.
- In a bowl add in ur couscous add 1 tablespoon of oil and mix well(this stops d couscous from sticking together n look like tuwo.. It makes it come out nice like fried rice)
- Add in ur couscous and lower d flame of ur cooker.
- Cover for some seconds den stir and add in ur remaining onion and cover for 2 minute to simmer.
- After 2 minutes ur jellof couscous is ready.. Enjoy!
