  1. Clean and sanitize all your vegetables.
  2. Chop mushrooms n put them separately.
  3. Cut tomatoes into big cubes and put them separately.
  4. Cut all other vegetables into big cubes and put them together but leave one onion aside that you will use to fry.
  5. Cut the onion that you had left aside into rings/ julienes.
  6. In a frying sufuria, add 2 tbsp cooking oil and let it heat a bit. Add onions and let them turn to almost golden brown. Add some salt just to taste.
  7. Add your mushrooms and cook them for 10 mins. Do not overcook them please because the more you cook them, the more you kill the nutrients.
  8. After 10 mins, add the mixed vegetables and leave tomatoes aside.
  9. Cook them for 10 mins then add tomatoes. Cook for 5 mins then add tomato concasse, abit of black pepper and abit of ketchup. If you don't have concasse, add a little bit of water mix it with tomato ketchup.
  10. After adding concasse and ketchup, simmer on low heat for 5 mins then remove it from the heat and serve while hot. Enjoy.
  11. NOTE: 1. Concasse is like blended tomatoes with water. As in, you blend tomatoes mixed with some water. You can fry it with onions, some black pepper, ketchup/ tomato paste to make tomato gravy.
  12. NOTE 2: You can replace mushroom with some beans which are also a source of protein to balance the diet.
