  1. Peel and boil to tender the Matoke. Peel and boil the potatoes too.boil meat with salt and 1 tomato if no left over meat stew /curry.
  2. Now add the boiled potatoes in the soft Matoke and mix.add in salt and turmeric to taste.using a presser or so pound them together
  3. When its softened and mixed fully,add in the meat.do the mixing again.all should be comfortably blended together. (Avoid using the mutton PCs that have thin bones).squeeze some lemon juice and mix well.serve hot

If you use green bananas for this dish, make sure they are very green. Plantains are a hard, starchy tree fruit similar in density and texture to potatoes and winter squash. Although plantains can be sliced thinly and fried, and then dusted with salt and spices, matoke is a dish similar to mashed potatoes. Matoke, also known as plantains or green bananas, are eaten daily in Uganda. They are often wrapped in their own leaves and steamed.
