  13. Make ready 1 tsp chilli powder
  14. Take 1 tsp lemon juice
  15. Get to taste Salt

  17. Prepare 1 tbsp wheat flour
  18. Make ready 2 tbsp gram flour
  19. Make ready 1 1/2 tsp dhania jeera powder
  20. Get to taste Salt
  21. Make ready 1 tsp red chilli powder
  22. Prepare 1/2 tsp Haldi powder
  23. Prepare 1/2 tsp hing
  24. Make ready 2 tsp sugar
  25. Prepare 1/4 tsp soda
  26. Get Water as required

  28. Take 1 1/2 raw bananas cut into pieces
  29. Take 5-6 baby potatoes cut vertically
  30. Make ready 5-6 small brinjals cut vertically

The traditional Undhiyu is a seasonal curry as some of the classic ingredients like Surti papdi, green peas, potatoes, Purple Yam, eggplant and raw banana.   1. For the vegetables
  2. Combine all the beans, Papdi, valoor etc.mix well and keep aside for 1/2 hour.
  3. For the methi muthais
  4. Combine all the ingredients along with little water and mix well to.make a smooth mixture.
  5. Divide the dough into equal portions and shape them oval by rolling between your palms and fingers.
  6. Heat oil in a kadhai and deep fry muthais a few at a time on a medium flame till.they are golden brown in colour. Drain and keep aside.
  7. Keep 2 tbsp of the Masala aside for stuffing the bananas.Stuff the brinjals with a little masala, toss well and keep aside.Stuff the potatoes and keep aside.
  8. Heat oil in a broad cooker.Add the carrot seeds and saute on a medium flame for few seconds. Add hing and saute.Add the beans, masala vegetables. Add 1/2 cup water, salt turmeric powder, jeera dhania powder, sugar and mix gently.
  9. Pour this masala water over the vegetables and pressure cook for 2 whistles.
  10. Stuff each banana with the remaining masala and keep aside.
  11. Transfer the Undhiyu to a broad vessel and add the methi muthais and stuffed bananas.
  12. Cover and cook on a slow flame for 10 minutes stirring occasionally.
  13. Serve hot garnished with fresh Coriander leaves
