  1. Take 1 cup potato
  2. Make ready 1 cup carrot
  3. Take 1 cup cauliflower florets

  8. Get 2 finely chopped onions
  9. Make ready Tomato puree (3-4 tomatoes)

  13. Prepare 1 tsp jeera powder
  14. Take 1/2 turmeric
  15. Get 1 tsp coriander powder

  17. Prepare Little Cashew paste
  18. Take 3 tsp oil
  19. Prepare 1 cup Water
  20. Prepare leaves Coriander

Then add boiled vegetables, sugar and mix with gravy gently. Mixed vegetable curry is easy to make and tastes great with plain rice, hot chapatis or parathas.   1. First roughly wash and chop all veggies, thoroughly.In a large vessel keep water to boil and add salt.
  2. Now add potato,carrot and beans.Allow it to boil.
  3. After few minutes add cauliflower and green peas.As cauliflower get cooked soon.
  4. Boil till veggies gets cooked 80%.And transfer to another bowl containing cold water.so that veegies color retains.
  5. Now in a pan add oil, jeera and green chillies.Give a quick stir.
  6. Next add chopped onions and ginger garlic paste.Fry till onions get translucent.
  7. Next add tomato puree.And cook for a minute.
  8. Now add dry powders like chilli powder,coriander powder, jeera powder,salt and turmeric. Mix well and cook till oil get separated.
  9. Now add cashew paste.This paste enhances the taste of gravy.(I soaked few cashews in warm water for sometime and grinded it to fine paste). Mix well.
  10. Now add 1 cup of water.adjust the consistency and cover and allow it to boil.
  11. Add garam masala and cooked veggies.Mix well.Adjust salt.cover and cook for 2 to 3 minutes.So that veggies blend well with the gravy.
  12. Finally add coriander leaves and serve hot with roti, poori.
