Instructions to make Sooji halwa:
  1. Soak 1 cup rava in 2 cups of water for 2 hours. Mix it well wirh ur hands to get the milk of the rava. Add again 1 cup of water and mix well. Strain the water well.
  2. In a kadai, grease it with ghee and add the strained liquid and bring to boil and keep on stirring continuously. Add 1 cup of sugar and stir. Keep on stirring when rahein mixture becomes glossy. Reduce the flame. In a small vessel, add 2 tbsps sugar and 1 tbsp water and keep on stirring to get the caramel.
  3. Add this caramel to the glossy mixture and keep on stirring. Add 1 tbsp ghee and mix well. Add the broken cashews and cardamom powder and keep on stirring till the mixture becomes thick and leaves the side of the kadai.Now turn off the stove and add 1 tbsp ghee and allow it to cool. Rava halwa is ready!!!
  4. Note: can add upto 11/2 cups of sugar for sweet lovers.
