Instructions to make Thakkali Chutney:
  1. Heat oil. Add cumin Seeds. Add crushed garlic and red chillies and saute for 10 15 seconds on low flame.
  2. Collect all ingredients and chop tomatoes lengthwise. Chop coconut in smaller pieces.
  3. Add chopped tomatoes, jaggery and salt. Cook on high flame for 5 minutes. Reduce flame place lid and cook tomatoes appear slightly mashed.
  4. Remove lid and cook till water evaporated. Switch off the flame and cool. Grind cooked tomato mixture and fresh coconut to a paste.
  5. Heat 1 tsp Cooking Oil in a pan. Add mustard seeds and when mustard seeds splutter put curry leaves and sauté for a second.
  6. Immediately add tomato paste and 1/2 cup water. Simmer on low flame for 7-8 minutes. Switch off the flame.
  7. Remove it in a serving bowl. Garnish with coriander leaves. Serve with idli, dosa, rice, uttapam or any snack. Can be stored for 10 days in refrigerator.
