  4. Add the tomatoes and little salt and saute till the tomatoes are soft and mushy.
  5. Add the marinated chicken mince, green peas and potatoes and coriander leaves and saute on high for 4 to 5 minutes.
  6. Add 1cup hot water and let it come to a boil. Keeping the flame on low, cover and cook till done. Garnish with coriander leaves. Serve warm

The potatoes take up a lot of volume, so you will need quite a bit more other vegetables to take their place. An easy weeknight green curry using store-bought curry paste mixed with cilantro and coconut milk along with chickpeas and potatoes. The potatoes should be mostly tender and lightly browning.
