  22. Prepare 1 small piece star anise
  23. Prepare 1/2 tsp fennel seeds
  24. Make ready 4 tbsp grated coconut
  25. Get as required oil

Preparing vangi bath is very easy. Brinjal is one of my favourite vegetables. I know that few people don't like brinjal, but I bet they are going to like it after trying out this recipe Vangi. Vangi bath is brinjal rice a popular karnataka dish, with flavourful spices.

Instructions to make Vangi Bath / Brinjal Rice:
  1. Cook the rice and keep aside
  2. To make the vangi bath powder, first dry roast the coriander seeds and set it aside to cool.
  3. Heat a little oil in a pan and roast urad dal,chana dal,red chillies,cinnamon, clove, cardamom,star anise and fennel seeds until light brown.
  4. Add grated coconut and roast it until golden brown. Cool it and powder it together with the roasted coriander seeds.
  5. Heat oil in a wok and add cinnamon, clove,cardamom,fennel seeds, cumin seeds,bay leaves and red chilies and saute for a minute.
  6. Add green chilies and onions. Fry till the onions turn translucent and add salt.
  7. Add brinjal and saute it for 2-3 minutes. Cover and cook until the brinjal is done.
  8. Add the vangi bath powder and mix it thoroughly and cook for a couple of minutes. Add water if needed.
  9. Add rice and lemon juice to the well cooked masala. Mix it well.
  10. Adjust the salt [ if needed] and serve.
  11. Vangi bath goes well with Raita /Plain curd, Pappad and Pickle

Makes a perfect one pot dish, lunch box favorite too. This is my favourite, because I am a big fan of brinjal. When I was staying in hostel, enjoyed this one in our hostel mess. I could not recreate the same taste, but definitely a very.
