- Pressure cook 1 cup rice with 2.5 cups water for 3 whistles.
- While the rice is cooking,cut the brinjals vertically in long pieces.As soon as you cut brinjals,place it in a bowl containing water.Add some salt in that water so that colour of brinjal does not change.Make sure water is sufficient enough covering the brinjals.
- Heat oil in kadai.Add mustard seeds.After it splutters add red chilli,curry leaves and hing.
- Remove the brinjals from water and add it to the kadai.Mix it well.
- Add turmeric powder and salt as per taste.Stir well. Keep stirring at intervals.You can just sprinkle some water over it.
- Once it is almost half cooked add Vangi bath powder.
- Mix well and cook till brinjal is cooked well.
- Meanwhile allow the cooked rice to cool.Spread it over a big plate.So that rice gets separated well and becomes fluffy.
- After the brinjal sabji is done.Keep the kadai down.
- Add rice in parts and mix it gently and evenly.So that the rice and brinjal sabji gets mixed very well.
- Serve Vangi bath or Brinjal rice with papad.
