  3. Prepare 55 gms Jaggery (or sugar)

  5. Get 50 gms Dates(seedless preferred)
  6. Make ready 20 gms tamarind + 100 gms warm water
  7. Get 1/2 tsp Panchforon (refer to aloo dum recipe, reference given) (see recipe)
  8. Make ready 1 whole dry red chilli
  9. Get 1/2 tsp Chilli flakes
  10. Get 1/2 tsp Kashmiri Lal mirch powder
  11. Make ready 1 tbsp mustard oil
  12. Get as per taste Salt
  13. Take 1/2 tsp dry roasted Cummin and coriander powder
  14. Get 1/2 tsp ginger powder
  15. Take 1 pinch black rock salt

Cherry/grape tomatoes will make the chutney more sweet and sour. Adjust sweet and heat to taste. Serve it with Parathas, Roti, Rice, or snack dip with pakoras, pita, crackers, or use as spicy sauce base for a Pizza. The sweetness imparted by sugar is obvious in this unique chutney, but restrained enough to accentuate the tangy and spicy flavours.

Instructions to make Sweet and sour Tomato and orange chutney:
  1. First, soak the tamarind for at least an hour in warm water, once soaked, mix it with a hand and strain it. Soak the dates and raisins too. Dry roast some whole Cumin and coriander seeds and grind them into powder.
  2. Wash and chop the tomatoes, with the help of zester or zest peeler, zest the orange and separate the fruits from the pith and discard the seeds (if any).
  3. In a frying pan heat mustard oil and pinch & add whole dry red chilli and Paanch Foran. Once it crackes add the chopped tomatoes, stir it for one or two minutes
  4. Add Kashmiri Lal mirch powder, Turmeric powder, black rock salt and salt as per taste and mix well.Add about 1/2 cup water cover and cook for about 5 minutes.
  5. Then add ginger powder, raisins and dates along with the soaked water (about 1/2 cup) orange zest and mix well and cook for about 3-5 minutes.
  6. Add chilli flakes and the strained tamarind pulp and cook for another 3 mins or so. Add little water if required.
  7. Then add the jaggery and mix well and cook for about 3 minutes or so and then add the prepared orange fruit and mix well gently. Cook for about 5 minutes. At the end sprinkle the roasted Cummin and coriander powder & mix well. Your chutney is ready. Bon Appetit!!!!
