To make the filling, place the courgette into a sieve set over a bowl. Add onion to sweat in the frying pan with the chilli and garlic. Then add pancetta, splash of white wine, pinch of salt and sugar and stir well. Distribute pancetta and fontina cheese Whisk heavy cream and egg together in a bowl. Season with oregano, nutmeg, salt, and pepper.
