  10. Take as required curry leaves
  11. Prepare For Kuzhambu
  12. Prepare 50 ml Gingelly oil
  13. Prepare 1 tsp Mustard seed
  14. Take 1 tsp Cumin seeds
  15. Get 1/2 tsp Fenugreek seeds
  16. Get 5 nos Red chillies
  17. Prepare 6 nos Garlic
  18. Make ready leaves Curry
  19. Take 20 nos Small onion
  20. Prepare 3 nos Tomato
  21. Prepare 1/2 tsp Turmeric powder
  22. Prepare 1/2 tsp Chilli powder
  23. Get 1 tsp Sambar powder
  24. Prepare 1/2 tsp Hing
  25. Make ready to taste Salt
  26. Get as required Water
  27. Get 1 Tamarind lemon size
  28. Make ready 2 tbsp Dried sunberry
  29. Make ready 1 tspn Jaggery
  30. Take As required Coriander leaves

Though I prepare a variety of South Indian Kuzhambu, my all time favorite is of course, Vatha kulambu. This is a very traditional and authentic South Vatha Kuzhambu-Sundakkai Vathal Kulambu. Vatha Kuzhambu / Nellai District Vatha Kuzhambhu Vatha Kuzhambu is my fav main dish for rice. Taste so good and pairs well with any variety of kootu like soorakai kootu(Bottle Gourd), beans kootu.

Instructions to make Vatha Kuzhambu:
  1. Take a pan add all incrediance for dry roast in low flame till golden in colour and it will comes to room temperature add into mixi add water grind in nice paste.
  2. Take a pan add gingelly oil 3 tspn add dried sunberry 2 tbsp fry in few minutes and kept a side.
  3. Take a pan add gingelly oil 3 tspn add mustard, cumin, fenugreek, red chillies, curry leaves, garlic, onion and tomato fry till it's come massive consistency. Add Turmeric powder, sambar powder, red chilli powder, water and hing for 5 minutes. Add tamarind paste few minutes the raw smull until goes. Then add paste cook in 10 minutes and then add dried sunberry, jaggery and gingelly oil 5 tspn cook few minutes. Vatha Kuzhambu ready to serve.

Now this is my favorite kuzhambu podi. This podi is great because you dont have to worry about any other spice powders, perfect one to have on hand.
