Shahi tukda a heavy and rich dessert belongs to muglai cuisine. In this recipe Rabri is poured over tukda i.e bread pieces. Bread slices are fried in ghee and then dipped in sugar syrup and then rabri is poured over these fried slices. I had shallow fried bread pieces instead of deep frying as i want to cut.

Instructions to make Shahi Tukda with Mango Rabri:
  1. Let’s prepare the Rabri first; For this boil the milk and let it simmer till it has reduced half in quantity.
  2. Add sugar and mango purée to it and mix well. When you reach a thick consistency of rabri turn off the flame and add some cardamom powder. Let this rabri cool down completely and then you can refrigerate it.
  3. Next step is to prepare the bread pieces. Trim the sides of bread and cut into squares or triangles and cook them until golden brown from both the sides in ghee.
  4. Simultaneously you can cook the sugar syrup by adding sugar and water to a pan and boil it till the sugar melts completely. You can also add saffron strands to it.
  5. Now dip the cooked bread pieces into the syrup for about 5 seconds and remove on a plate.
  6. Serve the bread pieces aling with mango rabri and garnish it with some chopped nuts. & 😊

Method : Cut the bread slices into round or triangle shape and set aside. Shahi tukda is one of the most popular Indian desserts. True to its name it is a 'shahi' delight! Pieces of bread are dipped in delicious saffron flavoured sugar syrup and topped with rich and creamy rabdi. Though rabdi is usually made by thickening milk over the stove for hours we have provided a shorter.
