Using a ladle, knead well and combine into a smooth dough. Cover and let it rest for 10-15 mins. Grease the idli molds with oil.
  2. Divide the dough into equal portions. Fill the idiyappam press with the dough and press the noodles onto the idli steamer. Add a little grated coconut if desired. Steam for 10-15 mins. Serve hot with vegetable stew or a coconut based curry.
