The ingredients needed to make Stuffed plantains:
  1. Take 2 firm but ripe plantains –boiled
  2. Prepare 1/2 cup breadcrumbs ( I used panko)
  3. Get 1/2 cup cheese (I used a mixed blend)
  4. Prepare 1 tsp thyme
  5. Get 1/4 cup melted butter
  6. Take 1 salt and pepper to taste

These sweet plantains are baked in the oven and then stuffed with a savory turkey picadillo filling and topped with cheese - pretty hard to resist! Instructions to make Stuffed plantains:
  1. Cut boiled plantains in half crosswise and then half length wise – as shown in pic
  2. Scoop out the middle –being careful to leave each piece somewhat like a shell
  3. In a bowl mix the scooped flesh(you can chop it in smaller pieces) , thyme, breadcrumbs and cheese – adding salt and pepper to taste
  4. Mix and keep pressing the mixture with the back of a spoon until it comes together
  5. Fill each shell with some mixture and place on a baking tray–drizzle over with melted butter
  6. Bake in a preheated oven at 350º F for 30 minutes
  7. You can stuff plaintains with shredded meat –you can use any melting cheese – you can also mix orange juice with the butter and add cinnamon

Remove with a slotted spoon and drain on. Sauté in hot oil until golden. Remove from heat and shape into rings. Peel plantains and place on a baking sheet and brush with oil. Using the tip of the knife, make a horizontal slit down the middle of the plantain.
