  5. In the same ghee add the rice and saute them till it's little brown.
  6. Add the milk and let it come to boil. Keep the heat on low and let it simmer.
  7. You can add the cardamom powder and saffron strands also.
  8. Let the payasam simmer on low heat till the milk is evaporated and thick and also the rice is cooked. You can cover partially and cook also.
  9. Add sugar and mix well again till the sugar dissolves.
  10. Pour in a big container and serve hot or cold after garnishing with cashews and raisins.
