- In the same ghee add the rice and saute them till it's little brown.
- Add the milk and let it come to boil. Keep the heat on low and let it simmer.
- You can add the cardamom powder and saffron strands also.
- Let the payasam simmer on low heat till the milk is evaporated and thick and also the rice is cooked. You can cover partially and cook also.
- Add sugar and mix well again till the sugar dissolves.
- Pour in a big container and serve hot or cold after garnishing with cashews and raisins.
