The ingredients needed to make Arbi patra:
  1. Take 1 1/2 cups Gram flour (besan)
  2. Get 1 tsp Ginger paste
  3. Get 1 tsp Green chilli paste
  4. Prepare 12 arbi leaves
  5. Get 1 tsp Red chilli powder
  6. Take 2 tsp Sesame seeds
  7. Prepare 2 tsp Coriander powder
  8. Make ready 2 tbsp Tamarind pulp
  9. Make ready 2 tbsp Jaggery grated
  10. Take 2 tbsp Oil
  11. Make ready to taste Salt
  12. Take 1 tsp Mustard seeds
  13. Prepare 2 tbsp Coconut scraped

Arbi patra (made with steaming colocasia leaves layered with gram flour batter ) is an ideal tea time snack Wash arbi leaves thoroughly in running water. Steps to make Arbi patra:
  1. Heat sufficient water in a steamer. Trim the stems of the arbi leaves an roll a rolling pin on the back side to soften the leaves.
  2. Place besan in a bowl, add ginger paste, green chilli paste, red chilli powder, coriander powder, cumin powder, turmeric powder, crushed sesame seeds, tamarind pulp, jaggery and sufficient water and mix into a thick paste. Add salt and mix again.
  3. Apply this paste all over the back side of an arbi leaf. Place another leaf over this with it's pointed end opposite the first one. Apply the paste over this too.
  4. Fold the sides slightly and tightly roll. Keep the rolls on a perforated plate and keep it in the steamer. Cover with the lid and steam till done.
  5. Take the rolls out and let them cool completely. Slice into roundels.Heat oil in a non stick pan.now deep fry Patra and serve hot.
