Instructions to make Moongdal Lauki Kichidi:
- Wash and rinse 1/2 cup rice and 1/2 cup yellow moong dal thoroughly.
- Peel and chop bottle gourd into small pieces.
- Heat 2 tbsp of ghee or oil in pressure cooker.
- Add 1 teaspoon of jeera/ cumin seeds or jeera to it.
- When you start smelling the aroma of roasted jeera and it starts splattering, add 3-4 cloves of minced garlic, 1 inch piece of ginger and 1-2 finely chopped green chilies.
- Then add finely chopped onion and wait for onions to turn translucent or golden brown indicating that they are cooked.
- Stir and add 1/2 teaspoon Haldi/ Turmeric Powder to the mixture.
- Cook for 2-3 minutes, till the tomatoes are cooked and mixed well with onions.
- Add rice with yellow moong lentils to the pressure cooker and bottle gourd pieces.
- Add 2.5 cups of water to it. Quantity of water can be varied depending on the thickness you prefer.
- Add 1-2 teaspoon of salt and stir it so that it gets uniformly added.
- Close the lid of the pressure cooker.
- Wait for 2 steams from cooker at high temperature and turn the heat off.
- Wait for 15-20 minutes for the steam to come out of the pressure cooker by itself.
- Khichdi is ready. Top it with til powder and ghee while serving.
