  6. Prepare 1/2 tsp Ginger paste
  7. Prepare 1 tbsp Oil
  8. Prepare 1/4 tsp Cumin
  9. Make ready 1 Bay Leaf
  10. Take 1 inch Cinnamon stick
  11. Take 2 Cardamoms
  12. Prepare 2 cloves
  13. Make ready 1 tsp Turmeric powder
  14. Get 1 tsp Chilli powder
  15. Get 1/2 tsp Garam masala powder
  16. Take 1/2 tsp Sugar
  17. Take As per taste Salt
  18. Take 1 tsp Ghee
  19. Prepare 1 tbsp Coriander leaves
  20. Take 1 small bunch Curry leaves

Mochar Ghonto or Banana Flower or Blossom Curry is another traditional Bengali preparation which is disappearing from our pantry these days. Mochar Ghonto, in Bengali 'Mochar' means 'banana blossom' & 'Ghonto' is roughly a 'mashed stir fry'. Prepping banana blossoms is a labourious activity, but it is worth every bead of sweat. Steps to make Mochar Ghonto:
  1. Peel the skin of the banana blossoms and keep only flowers. Remove the veins inside of the small flowers. Colour of flowers get changes quickly. Put the chopped banana in the buttermilk.
  2. In the cooker, add chopped banana flower and a little turmeric powder, salt and cook until a whistle.
  3. Heat oil in a pan and then add the cinnamon, cloves and cardamom. Then add the bay leaf.
  4. Then change the flame to medium and add the cumin and ginger paste.
  5. Now add the chopped potatoes, cover the pan and simmer for 10 minutes in a medium heat.
  6. Then add curry leaves and green chillies.
  7. Then add the boiled Chana dal and boiled banana flower
  8. Add turmeric powder, chilli powder, garam masala powder, salt and a little water.
  9. Cover the lid and cook for another 10 mins until the curry gets thick.
  10. Now add the grated coconut and stir for 5 more minutes.
  11. Then add the sugar, coriander leaves and ghee and stir well and switch off the flame.
  12. Delicious Bengal Mochar Ghonto ready.
