  1. Take 1 cup Basmati rice
  2. Get 1 tbsp Ghee
  3. Get 1 bay leaf
  4. Prepare 2-3 cardamom
  5. Prepare 1 star anise
  6. Prepare 1 inch cinnemom stick
  7. Prepare 2-3 cloves
  8. Take 1 tsp Cumin seeds
  9. Get 1 tsp Fennel seeds coursly grinded
  10. Take 10-12 saffron strings dilute in water

  12. Take 1 cup pineapple juice
  13. Get 7-8 Dry cranberry
  14. Prepare 7-8 Lotus seeds (Makhana)
  15. Prepare 7-8 Cashewnuts
  16. Prepare 7-8 Almonds
  17. Get 2 tbsp Kissmiss(raisins)
  18. Get 1/2 pine apple
  19. Take 1 tbsp Dry ginger powder
  20. Get as needed Cherry Apple slice for garnishing
  21. Make ready 1 tbsp. Sugar

This is one of the best classic pulao or rice based dishes not only. Kashmiri pulao is a very popular Kashmiri rice dish prepared with dry fruits, nuts and fresh fruits. It is an exotic dish perfect for get togethers and small parties. It is one of the simplest pulao recipe.

Instructions to make Fruits and Nuts Pulao:
  1. Wash and Soak Basmati rice for 1/2hr.
  2. Heat ghee in a pan add cinemon cardamom bay leaf star and cloves. Crackle cumin seeds and add chopped apple dice and chopped pineapple.Add kissmiss dry cranberry cashewnuts nLotus seeds (makhana) Almond saute for a min. and add rice without water. Saute rice coat with ghee and shine add salt coarsly grinded fennel seeds and dry ginger powder mix well. Add fresh pineapple juice. And 1cup water. Stir lightly cover and cook on slow flame. 5-7min.
  3. Now open the lid add saffron water and sugar (obt).And cook for 2-3min. Turn off flame and serve. Delicious healthy Fruits and Nuts Pulav is ready to Serve. Garnish with apple slices and cherry.

I had noted this from a TV show long time back. From then onwards, I used to make it often for my family. Addition of dry fruits and nuts, saffron, ghee make this Hyderabadi pulao rich and festive. Serve Hyderabadi shahi pulao garnished with the fried dry fruits, nuts and onions. You can even garnish with a few mint sprigs or coriander leaves.
