Wash and wipe the bitter gourd with towel and cut in to slices. Take a wide vessel,add sliced bitter gourd and all other ingredients,sprinkle some water and mix everything to a thick paste. Mix all the ingredients along with squeezed bitter gourd (except oil) with little water till the bitter gourd gets coated with the flour. Don't add too much of water.
Instructions to make Bitter melon pakoda:
- Wash bittermelon nicely and cut small pieces like star shape and remove seeds.put salt and smashed and drain water comes from bittermelon.add ginger garlic paste
- Add corn flour,and spices like kitchen king masala,red chilli powder,ajwain,turmeric powder,and besan.salt as per taste.(for putting salt careful because we already knead bittermelon with salt to remove water)
- Mix nicely till coated all bittermelon pieces with masala
- Ready to deep fry.heat oil and put step by step pakoda in oil on low medium flame.
- Fry till become golden brown crispy chruncy and fully fry.

Batter should be thick enough just to coat the veggie. Using a vegetable peeler, peel the bitter melon. Slice the bitter melon into ¼ inch slices and remove as many seeds as possible (the rest will be easy to remove once cooked). Add the spices and mix well.
