  1. For masala first heat oil in pan. Add mustard seeds, asafoetida, cumin seeds and dried red chilli, roast for a minute then add sliced onion and roast it till it becomes translucent, add boiled and mashed potatoes. Add turmeric powder and salt. Mix well. Add lemon juice and garnish with coriander leaves.
  2. For dosa, mix all daal rice and fenugreek seeds together. Wash twice and soak them for 5 to 6 hours. After 6 hours grind it into a fine paste. Let the batter rest in a warm place for overnight.
  3. After overnight rest, dough is fermented well. Now when you are going to make dosa add some salt in batter and mix well.
  4. Now heat a tawa, pour some oil and sprinkle little water over it and wipe the tawa with a tissue. Spread batter with the help of ladle from centre towards sides. Cook on high flame, add aloo masala and fold. Our masala dosa is ready to serve.
